Frosting Recipes

At Kyra’s Bake Shop, we don’t believe in over-sweetening our products. When the quality is good, you don’t need to cover up the flavor with excess sugar.  Here are a few recipes that are just sweet enough to be the icing on the cake: 

Cinnamon Whipped Cream:(great for the Snickerdoodle!)

1 cup heavy whipping cream
2 tablespoons powdered sugar
2 teaspoons vanilla extract
1 teaspoon cinnamon 

In a chilled mixing bowl, beat together all the ingredients on medium-high speed until the cream is thick and fluffy. Chill until ready to use, or top cooled cupcakes with a dollop.

*if you omit the cinnamon, and serve this with berries over vanilla cake, it makes a lovely shortcake!

Whipped Mascarpone Cream:

4 oz mascarpone cheese
1/3 cup heavy cream
1/2 cup powdered sugar
1 tsp vanilla
Whip all together!

DF Peppermint Crunch Cookies:

1 box of Chocolate dry mix
2 large eggs
¼ cup vegetable oil
1 ½ teaspoons peppermint extract

Line a baking sheet with parchment baking paper or a silicon baking mat.

Preheat oven to 350 degrees Fahrenheit.

Stir together all the ingredients and drop by rounded teaspoonfuls onto the prepared mat.

Optional: sprinkle the tops of the cookies with crushed gluten-free candy canes.

Bake until the center is just set, about 8-12 minutes. Let cool completely and enjoy!
